My sister, Mitchie, and I made these sandwich cakes for our Mad Hatter Tea Party. They are fun and easy party food that are great for any casual party. I also made a green version for St. Paddy's Day.
This sandwich is great for a lunch that you want to make special. You can make it look crazy and fun or elegant. It is versatile and most importantly, always a hit!
My version of this Swedish sandwich cake is basically just a giant sandwich that looks really fun. I make one layer of egg salad and one layer of tuna salad.
A more authentic version is made with smoked salmon and egg salad.
Ambitious Chefs bake their own fresh bread in a round cake pan. Some people buy square bread and cut it, place it in a spring form pan and assemble it that way. I cheat and get store bought bread that is already round and slice it so I have 3 bread layers. I’ve made this with King’s Hawaiian Bread, panini bread or any round bread that my local bakery might have.
The last time I made it I sliced King’s Hawaiian Rolls in half and lined a spring form pan so the rolls covered the bottom. Then layered all the good stuff from there. I like that technique best.
If you know how to make a sandwich, you really don’t need a recipe for this. Everyone knows how to make a sandwich and this is just a giant sandwich decorated and sliced like a cake. The only thing you might need is the “frosting” and assembly instructions. So, here you go. Plus, see the link above if you want to make it more authentic with smoked salmon.
Cream Cheese “Frosting” for Sandwich cake
Ingredients
- 1 block cream cheese
- 1 cup sour cream
- 1 1/2 cup mayonnaise
- 1 tsp dill
- 1 tsp dried parsley
Instructions
- Mix it up!
To assemble the cake: Slice bread so that you have 3 layers. Spread with mayonnaise and or mustard, or whatever you like on your sandwiches, on each layer and add your egg salad and or tuna and or cucumbers. Or try the meat version with ham, cheese and turkey. Then, when you’ve got that assembled, ice it with the cream cheese mixture..

Garnish the top with pretty vegetables like radishes, shaved carrots, and green onions and you can even add sliced hard boiled eggs or baby shrimp
