My big sister, Mitchie, gave me this recipe. I believe she got it from Barefoot Contessa. It is so simple and it turns out that it is one of my husbands very favorite cookies. I've never liked coconut anything but I made these and had to taste them, of course, and guess what...I love them. I don't want to love them because SUGAR! However, I subscribe to the "You only live once" philosophy now and then and I indulge myself in this sugary treat! Make them for Easter, (because they look like a little nest) and poke some cute jelly beans on top. You will have cute, festive and yummy cookies to wow your friends!

Coconut Macaroons

These bite-sized cookies are chewy coconut yumminess!

Cook Time 25 minutes
Total Time 35 minutes

Ingredients
  

  • 14 ounces sweetened flaked coconut
  • 7/8 ounces sweetened condensed milk use 3/4 cup plus 2 tablespoons
  • 1 teaspoon pure vanilla extract
  • 2 extra large egg whites at room temperature
  • 1/4 teaspoon kosher salt

Instructions
 

  • Preheat the oven to 325 degrees F.
  • Combine the coconut, condensed milk, and vanilla in a large bowl.
  • Whip the egg whites and salt on high speed in the bowl of an electric mixer fitted with the whisk attachment until they make medium-firm peaks.
  • Carefully fold the egg whites into the coconut mixture.
  • Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or 2 teaspoons.
  • Bake for 25 to 30 minutes, until golden brown.
  • Cool on wire racks.

Notes

Excuse the odd amount of sweetened condensed milk.  Ina’s Recipe calls for 14 ounces but I believe that is because that’s the amount that is in the can.  I’ve read many reviews on this type of cookie and the complaint with Ina’s is that they get a bit runny and messy and don’t hold their cute round shape.  My husband actually likes the runny ones.  He says the chewy part that oozes around the edge is an extra treat.  You can try it either way and see what you like best.
Add cute little jelly beans on top once they are cool.
Also, you can dip the bottom in melted chocolate to add an extra touch of yum!

Notice the runny edges, just the way the hubby likes them. However, if you use less sweetened condensed milk, your cookies will be prettier!

Non Dairy Coconut Macaroons

Try this non-dairy version.  I think I like the other macaroons because of the sweetened condensed milk but if you don’t do dairy…this might work for you!   xo

Ingredients
  

  • 5 cups coconut finely-shredded, unsweetened
  • 1 1/2 cup sugar granulated
  • Pinch of salt
  • 4 large egg whites lightly beaten
  • 1 teaspoon pure vanilla extract or almond extract

Notes

Preheat the oven to 350 F. Line 2 large baking sheets with parchment paper. In a large mixing bowl, mix together the coconut, sugar and salt. Add the egg whites and vanilla extract, mixing until well combined. Using your hands, form the mixture into small 1 1/2 to 2 tablespoon mounds, transferring each to the prepared baking sheets as you work. Bake until just the peaks of the cookies are light golden brown, about 12 to 15 minutes, turning the pan halfway through to ensure even baking. Allow the cookies to cool completely on a wire cooling rack. Serve at room temperature.

    Hola de nuevo Jill!!
    Vaya receta!! Que pinta!! El coco no es de mis fuertes pero debes saber genial!! Tendré que buscar las equivalencias en gramos jajaja. Aquí en España la pascua se celebra de otra manera. Bastante diferente!! Hay otros postre típicos. Gajorros y pestiños. A parte se hacen torrijas. Te enviare alguna foto. Están riquísimos!! Pero como dices…. Tienen mucha azúcar!! Jajaja es adictiva!! Aquí se usa el dicho “Vive la vida y olé” hay que disfrutad de la vida que tenemos. Agradecer cada día, lo bueno que tenemos. Tenemos el poder de hacer que cada día sea magnífico!! Ese es mi lema.
