We are all in a hurry all the time...right? If you prep the rice ahead of time, this meal is ready lickity-split! Easy, peazy, lemon squeezy!

Rice bowl extraordinaire!

Protein, grains, veggies…these rice bowls have all the good things. I use a mix of wild rice and quinoa as the base of the meal and load it up with veggies, protein and any mix of toppings…

Ingredients
  

  • brown rice, wild rice and/or quinoa cooked
  • veggie chicken strips or other protein
  • any mix of broccoli, edamame, cauliflower rice,
  • cilantro
  • salsa
  • cheese
  • sour cream
  • olive tepanade
  • tomatoes
  • grated carrots
  • avocado
  • pepitas, pine nuts, cashews or any seeds or nuts
  • lentil soup optional
  • Cafe Yumm Sauce

Instructions
 

  • Heat up your rice and protein and pop it in a bowl
  • add any or all the toppings of your choice.
  • Get this sauce online or make your own.  See sauce recipe here

The yummiest part of this is the sauce. Cafe Yumm is a great little place in Oregon and Washington. They make similar bowls and they sell their Cafe Yumm Sauce sauce online. I’ve made these rice bowls for years but this sauce is a game changer. It you are unable to buy their sauce online, I’m working on a knock off recipe based on the ingredients listed on the back of their bottle. I’ll let you know when I’ve perfected it! Kudos to Cafe Yumm for coming up with the best sauce in the world!

    Hi Jill!

    I made this with the tofu and it was a complete success… making this dish reminded me a lot of poke bowls; since you mentioned you do eat fish I was wondering if you’ve ever had it? my husband and I (food lovers that we are) could live on your tofu recipe and poke bowls 😀
